Chamois escalope in a hazelnut coat with parsley potatoes
and sauteed boletus mushrooms

Enjoy an autumnal meal with the scent of the forest!

Ingredients:

2 x 60	g	Thin stakes of chamois
		Salt and pepper
		Flour
		Eggs (whisked)
		Breadcrumbs (one third)
		Chopped hazelnuts (two third) for the breading
		Sunflower oil / butter for baking
1	spoonful	Venison jus
		Potatoes
		Butter
		Parsley (chopped)
		Boletus mushrooms
		Apple
		Cranberry jam

Flavor the thin stakes of chamois with salt and pepper. Cover then with flour, eggs and with the mix of hazelnut and breadcrumbs. Fry the breaded escalope pieces golden brown.

Peel the potatoes and cook them in salted water. Then flavor them with butter, salt and chopped parsley.

Sautee the boletus mushrooms in butter, then flavor with salt and pepper.

Serve your meal with an apple, filled with cranberry jam.
